Molletes

Molletes are incredibly simple, satisfying sandwiches of refried beans, melted cheese and fresh tomato salsa. In Mexico they are eaten for breakfast or in the evening as a light snack (after those legendarily long lunches). Don’t be fooled into thinking the ingredients look ordinary; somehow this combination makes for the perfect fix.

Ingredients

Feeds 4

4 Ciabbata buns

25g softened butter

300g refried beans

100g extra mature Cheddar cheese grated

Fresh tomato salsa to garnish

50ml crème fraîche

1 egg (Optional)

Method

Preheat the grill.  Cut the buns in half and toast the open sides under the grill or in a dry frying pan or wide toaster. Butter both halves, then spread the bottom halves with refried beans. Sprinkle the grated Cheddar over the beans, then place under the grill until the cheese starts to melt.

Garnish with the Fresh tomato salsa and, if you like, a drizzle of crème fraîche. If you’re feeling even more indulgent, top with a fried egg, before you pop on the lids and eat up at once!
