It’s warm and the sun is shining (hope it lasts!), so it’s time to welcome some tasty summery dishes. Tommi’s new seafood coctel, brings the fresh zing of a sun-drenched, beach-side cantina to our street food specials menu for the early summer. We take MSC king scallops and shrimp and cure them in a light habanero-spiked tomato broth, topped with fresh Hass avocado, herbs and diced cucumber for a highly slurpable summertime hit that you won’t want to miss. We’ve checked.
There’s also a welcome return to a Wahaca summer salad favourite – Hibiscus glazed beetroot and whipped goats curd. To keep things exciting, we bury our creamy goat’s cheese beneath baby spinach, pink picked onions and fresh glazed beetroot, so dig in and mix it up.
